8 organic eggs
4 oz Monterey jack cheese, grated
large handful of organic spinach
3 pieces of thick cut bacon, cooked and cooled
Butter to grease the casserole dish
Sea salt and freshly ground pepper to taste
In a food processor, chop up your spinach leaves. I use a generous handful.
Add the cooked bacon to the food processor (it should be cool, not hot).
Crack open all your eggs into a mixing bowl, scramble them together in the bowl.
Add the spinach and bacon mixture to eggs and mix together gently.
Add the grated jack cheese to the to egg, spinach and bacon mixture and gently mix together.
Grease you 8 x 8 glass pan with butter.
Pour the egg mixture in the glass pan and place in the oven to bake for 25-30 minutes.
